Quick Chicken Karahi
A bold, restaurant-style karahi you can pull together on a weeknight using Shan Karahi Gosht masala and fresh tomatoes.

Ingredients
- 1 kg bone-in chicken pieces
- 4 medium tomatoes, roughly chopped
- 1 packet Shan Karahi Gosht masala
- 4 tbsp cooking oil or ghee
- 1 tsp ginger-garlic paste
- 2 green chillies, slit
- Fresh coriander and ginger julienne to garnish
Method
- Heat oil in a heavy wok (karahi) over high heat. Add chicken and sear until golden on all sides — about 5 minutes.
- Add ginger-garlic paste and stir for 1 minute.
- Tip in the chopped tomatoes and the Shan masala. Stir well.
- Cover and cook on medium heat for 20 minutes, stirring occasionally, until the oil separates on top.
- Add slit green chillies and cook uncovered for another 5 minutes until the gravy thickens.
- Garnish with fresh coriander and ginger julienne. Serve with fresh naan or roti.
Tips
- For extra depth, add 2 tbsp of National Yogurt when you add the tomatoes.
